This delicious cole slaw. Yum. I made it this weekend to eat with some even more delicious slow cooker BBQ chicken and upon first bite I knew I had to share it. I had a photo of the chicken, but we already know what happened to that. I picked this little ditty up at All Recipes, my favorite go-to site for recipes. If I haven't mentioned it before, I love this site because of the clear ratings and reviews. If I'm searching for something specific, I always search the name of the item (Cole Slaw), and then sort by highest rating. I normally only try stuff that has been rated by at least 150 people, that way I don't waste my food when someone else already has! :) I always look at the recipe, and then read the reviews to see what changes other people made. Thank God I do, too, because this recipe called twice the amount of sugar I used. For my taste, it was great with a little less than half what they suggested, and since I also don't like my slaw very liquidy (made it up), I only used 1/3 c. of mayo (not Miracle Whip, because I didn't want the added sweetness). I know a lot of people on that site hate when others make a lot of changes to the recipes as posted, but I really just combined many of the suggestions people made in the reviews. Without further adieu . . . (my changes are in purple)

SWEET RESTAURANT SLAW (452 reviews, 5/5 stars)

1 bag 16 oz. Cole Slaw mix (1 head cabbage)
2 tbsps. diced onion
2/3 c. creamy salad dressing (such as Miracle Whip)--(1/3 c. mayo)
3 tbsps. vegetable oil (1 tbsp.)
1/2 c. white sugar (1/4 c. organic)
1 tbsp. white vinegar (1 tbsp. rice wine vinegar)
1/4 tsp. salt (salt to taste)
1/2 tsp. poppy seeds (didn't use at all, since I didn't have any)
**also added about a teaspoon of deli mustard

I made less since I only used a small head of cabbage and, based on the reviews, I also added chopped broccoli florets and shredded carrots (since I didn't use the bag mix). It was really good and so easy. I think the recipe calls for it to "set" in the fridge for 2 hours, but I had mine immediately and it was great. If you like slaw and are looking for a change, try this out. I loved the crunch of the fresh cabbage and really felt like I was doing my body right --minus the mayo, oil, and sugar, of course, but hey, 1 step at a time!!! I'd like to think Karen @ Fitness: A Journey Not A Destination would be proud!!!
